At UpperCastleTallowCo, our mission is to revitalize rural economies by transforming locally sourced beef fat into premium ancestral wellness goods. We apply regenerative principles to create value-added tallow products that honor agricultural heritage, support rural suppliers, and deliver clean alternatives to modern consumers.

Operating out of Canajoharie, NY, we collaborate with small-scale processors and ranchers to reduce agricultural waste, reinvest in supply chain integrity, and promote scalable production rooted in ancestral nutrition and ethical sourcing. Every jar we produce contributes to a broader ecosystem of rural resilience, health-forward access, and community-centered innovation.

As a registered federal entity (SAM.gov & SBA), UpperCastleTallowCo is prepared to partner with USDA and allied agencies to expand the reach of regenerative commerce through pilot programs, cooperative development, and inclusive storytelling.
